Baetje Farms winner Miette reaches Bay Area
The annual American Cheese Society conference is my best chance to taste up-and-coming cheeses from around the country. Sure enough, Steve and Veronica Baetje's cheeses were uniformly delicious, and I wasn't surprised when they claimed several ribbons at the competition awards ceremony a few days later. If the disk gives when probed gently and the rind shows some light mottling, the interior should have the mushroom aroma and creamy texture I admire.
