Toasting hot peppers with cool Champagne
Vegetables are everywhere at Harold’s Cabin, including on the second-floor back deck, where the restaurant cultivates them. But the undisputed star of the forage board, which chef Justin Pfau designed to ape a charcuterie plate, is the shishito pepper. Pfau calls this preparation "simple, straightforward and semi-rustic."
