Valley Ford Cheese Co. on a roll with Highway One
Bianchi-Moreda wanted to create a role for herself on the ranch, so she started experimenting with cheese making. The wheels get an initial wash with bacteria-laced brine to produce some pinkish growth on the rind and boost the aroma. For the next few weeks, the wheels are washed lightly with brine alone and encouraged to develop a natural rind.
